I was whupped from work, so I crashed until 10 and fired up a Healthy Choice 5-spice beef dinner (decent), a Diet Dr. Pepper, and a Warm Delights miniature chocolate fudge cake.

I had some catfish. I caught a 32#er a couple weeks ago, and just now ate some of it. AWESOME!!
Complete with baked potato (the wife's a health nut) and some steamed asparagus.

I had actually never even heard of quiche before I married her. I think its pretty cool. Like a giant scrambled egg pie with a bunch of stuff in it. It always gets Franks Red Hot sauce on it, no matter what's in it.
I know its supposed to be French and all, but really if its a just a big scrambled egg pie, its, you know, country food.

I certainly would not kid around about dinner. HR, you should try it, its good stuff. I usually don't eat it when I go out, but my wife puts BBQ, and onions and peppers, and stuff like that in there. My favorite is deer sausage cut into little cubes.
I remember the first month we were married, no money at all, she made squash quiche. My dad had tons of yellow squash in his garden and he gave us a big sack of the stuff. Mrs. Chief made squash quiche. Not sure if it was really good, or that we had so little we were happy to have anything to eat, but I remember it being awesome.
She almost always puts tomatoes in there. I like it.

HR you should really try it. It is actually fairly easy to make and really good.

Shrimp on a stick w/ some kind of sauce(still working on that)

and she even has a girl come out and help clean house. At least Dad still mows his own yard. She spends all day doing yardwork and socializing. She did say you looked nice at the party last Sat.

It was a southwestern creamed corn. Saute corn in butter, add rotel and seasonings, add sour cream.
The cake came from Marble Slab. Oh, it was good. One slice left.
And don't forget the homemade chimichurri sauce. Better than I thought it would be, but I will back off on the red wine vinegar a bit next time.

Friday night is always pizza night, usually the Little Ceasars variety. We always have a houseful of kids around on Fridays, so I go cheap. Its hard to beat that $5 pizza. Sometimes we splurge and get Soprano's. Its really good pizza.

Sunday night is usually pizza night around here as Wacoso works an hour later on the weekends than the week days. I am making this Sunday's pizza myself. I will let you know how it goes.
I like the LC's $5 pizza. Wacoso...not as much.
I hated Papa John's for years until I got stuck in a downpour a few weeks ago and had to eat there because I was about to pass out and it was next door and under a canopy from where I was. I got one of their specialty pizzas and changed my mind. It could be b/c this one didn't have their usual pizza sauce, which I haven't liked in the past. Who knows? All I know is it was good pizza.

Babe you should try Pizza by Marco in Plano. Its at Parker & Parkwood (?) just east of the tollway. If you are going north on the tollway, right on Parker. Its on the backside of the strip center where the On the Border is. They have awesome thin crust pizza.

Thought I'd share something we did earlier this week:
Large pork loin. Cut into 3/4 - 1" thick slices. Marinade in raspberry chipotle sauce. Wrap in bacon. Cook over charcoal with some mesquite. Pretty darn good.

I made homemade cinnamon rolls with homemade icing this morning. Not exactly dinner food, but I was proud of them. They turned out yummy!
And apparently the ability to make homemade icing has definitely won over the boyfriend. He said he would never leave now. :)

Nah, he knows I'm a catch, and he knew he was stuck with me the day we met. Every day there is always some little thing that makes me fall in love with him even more, so I think he's stuck with me for as long as he wants too.
I think the homemade icing just helped a little more today. :D

I think my exercise program this week will be working off all the beer and fajitas I had this weekend.
As if the tailgate wasn't enough, the girls wanted fajitas again on the way home...

Last night was Sunday Pizza out of a box night. We went with Spinach and Feta, and on my half, I added Jalapenos, crushed red pepper, and fresh ground pepper. This morning, I am glad the wireless feature is enabled on my laptop.

Why thank you for asking...
One Pillsbury pizza crust from the refrigerated section at the store. Boboli or other similar crusts will also do. Roll Pillsbury crust to desired thickness.
One jar of chunky, thick salsa. I used a fire roasted tomato organic salsa as I find those have the most robust flavor. Drain a good quantity of the juice. You don't want it too liquidy.
One bag of Mexican shredded cheese (four cheese blend)
One pound of hamburger meat, browned with onion and spices of your choice.
One half bell pepper and one avocado
Roll crust to desired thickness, place on pizza stone or other baking sheet
Put drained salsa on top, like you would pizza sauce
Put browned taco meat on top
Top with cheese
Add bell pepper for garnish on top--add any other toppings you'd like too
Bake according to crust directions
Add avocado for garnish after baking. (Maybe sour cream too, if you were feeling crazy.)
I served this with a side of Mexican-style Rice a Roni.

No actually, I haven't, because they're flavored with Nutrasweet instead of real sugar and I don't eat/drink things made with Nutrasweet, Splenda, Equal, Sweet and Low, etc. (I prefer real sugar and HFCS, thankyouverymuch.) Fake sugar really weirds me out and I avoid it at all costs.

BC, a good variation on your pizza is using skillet cornbread instead of pizza crust. Cook the cornbread halfway, top with beef, cheese, peppers, onions, and then finish cooking.

I always get a burger. The reason I dont like Applebee's is all their burgers come with bacon. You can tell them to hold the bacon but you still pay for it. I was glad to find they have added a baconless Frito burger to their menu but still wont go back unless its to please my dinner date's craving for something.

Leftovers tonight. My chef-in-training had a couple friends over last night and they cooked up some good stuff, too much to eat in one night.
One dish had chinese eggplant in it. Not even close to the same as the eggplant I am used to eating. Dang good! It was some Turkish dish that was maybe the best thing I have eaten in long time.
Another was a noodle dish with shrimp, onions and some other stuff. Pretty good.
That's a good thing cause I have an early baseball game (old fart league) assuming it doesn't rain. ANd the wife never has dinner ready before 7pm, so leftovers it is.

Here is the menu for the last two days....
BBQ brisket and Sausage, potato salad, beans, salad, rolls, BBQ sauce, beer. Dessert was a raspberry cake with white icing.
All you can eat open flame Ribeye steaks, baked potatoes with all fixin's available, salad, rolls, tea. Dessert was banana pudding.
I think I gained about 819 pounds this weekend.

I lost 50lbs this summer. If I were to lose another 50 I would be down to 180 lbs. Thats what I weighed my sr. year in high school. I would go for a contest like that.

Everybody has their own set of problems. Drinking just isnt one of mine. I only drink beer two or three times a month and never anything but beer.
